Frog Eye Salad

For those who have never tried Frog Eye Salad I posted the recipe below.


1/2 tsp salt
1 1/4 cup sugar
2 eggs
1 TBSP lemon juice
1 3/4 cup pineapple juice
2 rounded TBSP cornstarch
Mix above ingredients and cook on medium heat until thick (stir constantly) then set aside to cool.

Boil the following ingredients 15 minutes or until done:
3 quarts water
3 tsp salt
1 TBSP cooking oil
1 package Acine de Pepe pasta (the pasta is shaped like little frog eyes, I guess, I've never actually looked too closely at a frog's eye)
Drain pasta and rinse in cold water.  Add the cooled pineapple mixture to the pasta.  Mix well and put in the refrigerator over night.

Add the following the next day:
1 12oz container cool whip
your favorite fruits
We like pineapple, strawberries, mandarin oranges, peaches.
The picture above only has a bag of frozen raspberries, thawed.  This makes it perfect for Christmas or Valentines day :).

Dakota showed me this picture today that his friend Hayden sent him.  Oh my goodness these two were such cute little stinks!  They still are pretty cute :).
