Cabin Food


Most days Lilly has quite a few hard moments. 
Today was no exception...



She perked right up when I asked her if she wanted a bath.  She doesn't say much (that we can understand) other than baba (bottle), Mama, Dada, Yes and her newest word she's added to her vocabulary is NO.  And she knows exactly what NO means.  Despite her limited vocabulary she understands a lot of what we say to her.  Almost 18 months and quite the little smarty pants.
Oh and she also sings, a lot.  It's so cute!




The husband took some of the kids to walk the pipe--a long standing cabin tradition and #4 on Emmy's Summer Bucket List.




He also showed the kids the exact spot where he proposed to me almost 20 years ago.  I think he told them that next to the day he married me, it was the best day of his life :)

Meanwhile, back at the cabin, my dad and Uncles Rob and Dave came up to do some work.  Janie spent hours outside with them.  She never got tired of watching them, or talking to them.

One of the best things about the cabin is the food! 
A few of our favorite "Cabin" foods are:

Papa Murphy's Pizza
Pizza from "The Store" in Midway
(this is a new addition to our list, we tried it this week for the first time and loved it!)
Spaghetti
(Not the husband's favorite, he hates it, we only make it when it's just me and the kids)
Breakfast Casserole
Caramel Popcorn
Buttered Popcorn
Fresh Baked Cookies and Ice Cream
Just to name a few :)

Today I made Navajo Tacos--my kids love them but not so much for the tacos--just the scones I serve them on.  It is SO easy if you want to try it here is the recipe:

Scones (I make them with homemade bread dough--any kind or thaw some Rhodes rolls and fry them in Canola Oil)
Mix a can of Chile (we use Turkey Chili), Pinto Beans and Refried Beans (I had some baked beans today and threw them in too) --heat on the stove or in the crockpot.
Pour the bean mixture over the scone and top with cheese, lettuce, tomato, sour cream, avocado, olives and our family favorite RANCH DRESSING

The rule is the children have to eat at least one scone Navajo Taco style and then they can eat the rest with butter and honey.

If you've been wondering how Jackson is doing, other than wanting to eat real food he seems to be healing up quite nicely.  He's eating plenty of pudding, yogurt, ice cream and Popsicles.  The other kids think he is SO lucky and keep stealing his pudding and Popsicles.  He did manage to get a scone down today, took him a while, but he did it.
