Lilly's Muffins

These were originally called "Annabelle's Muffins" since Annabelle's mom makes them and Lilly LOVES them.

I tweaked the recipe a little so I've renamed them Lilly's muffins and everyone but the pumpkin haters in the family love them!  And they are SO HEALTHY.  Here's the recipe...

1 15oz can pure pumpkin
2 eggs
1 1/4 cup pure maple syrup
1 cup melted coconut oil
1/2 cup flaxseed
2 tsp baking powder
1 Tbsp Cinnamon
1 tsp salt
2 1/4 cups whole wheat white flour
2/3 cup semi sweet chocolate chips

Mix and put in muffin cups and bake @325 for 45 minutes
Makes 2 dozen muffins
(I double this recipe and freeze them)
